美國有機牛酥油 Organic Valley Ghee Clarified Butter (212g)
酥油 (ghee) 是印度歷史悠久的傳統食油,用牛或水牛的牛油提煉:將牛油以中低溫加熱,讓水份完全揮發,再隔走乳固體蛋白質,餘下的就是金黃色的純脂肪 (clarified butter)。雖然原材料是牛奶,但經揮發過濾後,已大體不再存在牛奶中的乳糖和酪蛋白,所以有牛奶或乳糖不耐受的人士也可以食用,而且酥油的烹飪煙點達攝氏210度,比牛油、椰子油和一般食油都高,不容易氧化產生自由基,所以最適宜用作高溫煮食,亦可搽麵包餅乾或製作甜品等。存放室溫陰涼地方就可以,無需放雪櫃。

Organic Valley Ghee Clarified Butter starts off as organic, pasture-raised butter with 80% to 84% butterfat. It is then slowly simmer to remove all excess water, lactose and casein protein. What's left behind is all the nutrients and 100% butterfat.
Ghee Is good for cooking because it doesn’t degrade or blacken at high temperatures. With mostly saturated fats and a high smoke point of 210 degrees Celsius, it is stable and does not easily oxidise. It is shelf-stable and can be kept at room temperature in a cool place with no need for refrigeration.
Organic Valley is a cooperative of some 2,000 small family organic farms in the US, who don't want to engage in large-scale industrial farming. Their cows are raised on grass with no antibiotics, synthetic hormones, toxic pesticides or any GMO feeds.
